Vegetarian Chickpea Tajine

 

serves 4

Riki Kaspi Spice Journey Vegetarian Chemoula

INGREDIENTS

4 tablespoons Riki Kaspi Spice Journey Vegetarian Chermoula Moroccan Marinade

2 cups chickpeas, soaked overnight and cooked until tender, or 1 tin chickpeas rinsed and drained

3 tablespoons Canola Oil

2 large onions, diced

2 tins tomatoes, diced

3 carrots sliced into rings

1 zucchini, cut into large dice

1 teaspoon turmeric powder

1 teaspoon salt

Up to 1 tablespoon Riki Kaspi Spice Journey Moroccan Harissa or to taste (optional for chili lovers)

Fresh mint, chopped for garnish

Riki Kaspi Spice Journey Moroccan Couscous Kit to serve

NB You can substitute or add any fresh seasonal vegetables of your choice

Vegetables star when combined with chickpeas and Riki Kaspi Spice Journey Vegetarian Chermoula in this delicious slow cooked tajine

Method

Fry the onion in the olive oil until soft in a deep heavy based saucepan with a lid.

Add the Vegetarian Chermoula Moroccan Marinade, turmeric, salt and the Moroccan Harissa if using.

Fry for 2 minutes to combine then add the tomatoes and bring to the boil.

Add carrot, zucchini and chickpeas and reduce the heat to low.

Cover with the lid and cook for 1 hour on the stovetop or in the oven at 160 deg C.

To serve, garnish with fresh mint and accompany with Couscous and Moroccan Harissa on the side.
