Turkish Spiced Rice Pudding
310g pouch Riki Kaspi Spice Journey Turkish Spiced Rice Pudding
400g red plums (remove stone) and cut into ¼
150g jarred, pitted Morello or sour cherries
50g caster sugar
1 cinnamon stick
1½ tbsp lemon juice
¼ tsp rose water
Cook Riki’s rice pudding as per instructions.
Mix the plum, cherries, sugar, cinnamon sticks, lemon juice and rose water in a medium saucepan and stir. Cook over medium heat until a thick jam consistency (about 20 minutes).
Add rose water and set aside to cool.
Place some of the cooled cherries into individual bowls and spoon over some pudding to cover. Repeat with more compote and rice. Finish with a spoonful of compote, a sprinkle Riki’s rice pudding topping (included in kit). Serve immediately.
